Vegan Grilled Club Salad

Summer is almost over, but that won’t stop me from grilling in my backyard! I don’t know about you, but I absolutely fell in love with my new grill this year and I can’t get enough of creating new recipes I have never tried before. Anything can taste delicious over the grill if you have the right techniques and flavors. For this recipe, I tried to replicate a club sandwich, using similar ingredients and cooking them in completely different ways. This quick and super easy recipe was inspired by a club sandwich of course, but I had to try something new and turn it into a grilled salad!

Pro Tips:

  • When Grilling with your vegetables, don’t put the heat on too high – this will burn your lettuce too fast.
  • Do all the preparations in advance before finishing the sauce to make it easier to toss everything in right after grilling the vegetables.
  • You can use any of your favorite bread to go with this recipe – if you are not a baguette person of course.
  • If you are feeling extra fancy, throw in your favorite herbs (basil is a good choice) to add Earthiness and lightness to compliment the warm vegetables.

Salad Ingredients

  • 2 hearts romaine lettuce, rinsed, cut in half lengthwise and pat dry
  • 1/2 baguette, sliced on an angle into 1cm-thick slices
  • 4 pieces vegan bacon, cooked & chopped
  • 3/4 cup smoked tofu, sliced or vegan chicken substitute cooked on the BBQ
  • 1 cup cherry tomatoes, halved
  • 1/4 cup Vegan feta or chevre-style cheese, crumbled

Let's get creative with the grill and cook more than just break and meat, turning smoked vegetables to a main and everything else as a side. If you have never grilled your romaine salads before, this is one you don't want to miss out on.

Ingredients
  • 1 garlic clove, crushed
  • ¼ cup egg-free mayonnaise
  • ½ avocado or vegan sour cream
  • 1 tbsp maple syrup
  • 1 tbsp dijon mustard
  • 1 tbsp lemon juice freshly squeezed
  • unsweetened oat or soy milk, as needed to thin out
  • sea salt, to taste
  • olive oil, as needed
  • 2 hearts romaine lettuce, rinsed, cut in half lengthwise and pat dry
  • ½ baguette, sliced on an angle into 1cm-thick slices
  • 4 pieces vegan bacon, cooked & chopped
  • ¾ cup smoked tofu, sliced or vegan chicken substitute cooked on the BBQ
  • 1 cup cherry tomatoes, halved
  • ¼ cupVegan fetaor chevre-style cheese, crumbled
Instructions
  1. In a small blender, blend garlic clove, mayo, avocado, maple syrup, dijon, and lemon juice. Adding milk of choice, 1 tbsp at a time, until the desired consistency is reached. Season with salt to taste and set aside.
  2. Heat the BBQ to medium-high heat.
  3. Brush 2 tbsp olive oil on both sides of baguette slices, as well as the cut side of the romaine. Sprinkle the romaine with some salt and pepper and place them onto the grill, cut side down.
  4. Grill the romaine for 2 to 3 mins or until you have some nice charred grill marks.
  5. Grill the baguette for 1-2 minus per side, until toasted and slightly charred. and roughly chop.
  6. Meanwhile, grill the veggie bacon.
  7. On a large serving platter, place lettuce, and arrange; smoked tofu, veggie bacon, tomatoes and vegan cheese of choice. Drizzle with dressing and top with croutons.
