How you can Make Club Sandwich into a Grilled Club Salad (Vegan)

Let's get creative with the grill and cook more than just break and meat, turning smoked vegetables to a main and everything else as a side. If you have never grilled your romaine salads before, this is one you don't want to miss out on.

Ingredients
  • 1 garlic clove, crushed
  • ¼ cup egg-free mayonnaise
  • ½ avocado or vegan sour cream
  • 1 tbsp maple syrup
  • 1 tbsp dijon mustard
  • 1 tbsp lemon juice freshly squeezed
  • unsweetened oat or soy milk, as needed to thin out
  • sea salt, to taste
  • olive oil, as needed
  • 2 hearts romaine lettuce, rinsed, cut in half lengthwise and pat dry
  • ½ baguette, sliced on an angle into 1cm-thick slices
  • 4 pieces vegan bacon, cooked & chopped
  • ¾ cup smoked tofu, sliced or vegan chicken substitute cooked on the BBQ
  • 1 cup cherry tomatoes, halved
  • ¼ cupVegan fetaor chevre-style cheese, crumbled
Instructions
  1. In a small blender, blend garlic clove, mayo, avocado, maple syrup, dijon, and lemon juice. Adding milk of choice, 1 tbsp at a time, until the desired consistency is reached. Season with salt to taste and set aside.
  2. Heat the BBQ to medium-high heat.
  3. Brush 2 tbsp olive oil on both sides of baguette slices, as well as the cut side of the romaine. Sprinkle the romaine with some salt and pepper and place them onto the grill, cut side down.
  4. Grill the romaine for 2 to 3 mins or until you have some nice charred grill marks.
  5. Grill the baguette for 1-2 minus per side, until toasted and slightly charred. and roughly chop.
  6. Meanwhile, grill the veggie bacon.
  7. On a large serving platter, place lettuce, and arrange; smoked tofu, veggie bacon, tomatoes and vegan cheese of choice. Drizzle with dressing and top with croutons.
