I love this vegan egg mcmuffin recipe! I use my just egg recipe (#1 on this list above) to make a vegan egg patty, with english muffin, vegan sausage and cheese to make this fast-food classic. You can cook the vegan “egg” in a ring mould in a pan, or grease a lipped cookie sheet, pour in the batter, let cool and cut into squares.
