Finding vegan Passover recipes can be challenging… especially when many ingredients in vegan recipes might not be considered kosher for Passover. I’ve refrained from including certain vegan recipes that might not suit Passover but understand that some foods might be considered Kosher or not Kosher depending on each person (ex. some don’t eat rice and beans while others do.)

For those who eat kitniyot during Passover, I wanted to include this incredible hummus that is loved by many readers of The Edgy Veg. You can also make it the day before or send the recipe to someone in the family to ensure the creamiest hummus makes its way to your meal. Get the recipe here!

Vegan Potato LatkesVegan Latkes (20 mins + Egg-Free) 

This vegan latkes recipe uses the liquid from a can of chickpeas along with flour (which can be gluten-free flour of choice)! These crispy fried latkes will taste just like the original recipe, but egg-free and delicious . My preference is dipping latkes in apple sauce but you could also have a side of vegan sour cream!
