This healthy salad is the perfect combination of bright colours, fresh ingredients, and flavour. With zero cook time, this salad is the easiest way to add colour & hydration to your plate.

INGREDIENTS FOR BEST VEGAN WATERMELON ‘FETA’ MINT SALAD
- 1 lime, juiced
- 3 tbsp olive oil
- Sea salt
- 1 cucumber, spiralized
- 3 cups watermelon, cut into 1/2-inch cubes
- 1/4 cup red onion, fine dice
- 1 avocado, cubed
- 1/4 cup crumbled vegan feta cheese
- 1/4 cup fresh mint leaves, chopped + extra for garnish
INSTRUCTIONS FOR WATERMELON ‘FETA’ MINT SALAD
To prepare this salad, spiralize a cucumber, and cut 3 cups of watermelon into cubes. In a large bowl, whisk together the juice of a lime, olive oil, and a pinch of salt. Add cucumber, watermelon, diced red onion, cubed avocado, crumbled vegan feta cheese, and mint to the bowl. Very gently, toss everything together to mix and coat everything with the dressing. Taste and add additional salt if needed. Add more mint leaves and vegan feta on top to garnish.

Vegan Recipe for Watermelon ‘Feta’ Mint Salad
- 1lime, juiced
- 3 tbsp olive oil
- Pinch of salt
- 1 cucumber, spiralized
- 3 cupswatermelon, cut into ½-inch cubes
- ¼ cup red onion, fine dice
- 1 avocado, cubed
- ¼ cup crumbled vegan feta cheese (optional)
- ¼ cup fresh mint leaves, chopped + extra for garnish
- In a large mixing bowl, whisk together lime juice, olive oil, and a pinch of salt.
- Add cucumber, watermelon, red onion, avocado, vegan cheese (optional) and mint.
- Gently, toss using a folding motion to combine the fruit and veg with dressing. Taste and salt as needed.
- Garnish with additional mint and vegan cheese.

I made the ““Watermelon ‘Feta’ Mint Salad,” but renamed it Watermelon Hemp Basil Salad. This is VERY close to Candice recipe, but using seeded or alkaline ingredients.
My version was made with

* 6 key lime, juiced
* 3 tbsp olive oil
* Pinch of sea salt
* 1 cucumber,spiralized
* 3 cups seeded watermelon, I used melon balls
* ¼ cup red onion, fine dice
* 1 avocado, cubed
* ¼ cup hemp seeds
* ¼ cup chopped fresh basil
The favor married so well. It was very light but somewhat filling due to the avocado, hemp seeds, and olive oil. The favors truly remind me of what makes summer so special.
