I don't support boring salads. What I do love is a side of freshness on my plate at a summer cookout. Pair with a veggie burger and a cold drink and you're perfectly set for a summer afternoon.

Ingredients

lime
, juiced

olive oil
Pinch of
salt

cucumber

spiralized
3 cups
watermelon
, cut into ½-inch cubes
¼ cup
red onion
, fine dice

avocado
, cubed
¼ cup crumbled
vegan feta cheese
(optional)
¼ cup
fresh mint leaves
, chopped + extra for garnish
Instructions
In a large mixing bowl, whisk together lime juice, olive oil, and a pinch of salt.
Add cucumber, watermelon, red onion, avocado, vegan cheese (optional) and mint.
Gently, toss using a folding motion to combine the fruit and veg with dressing. Taste and salt as needed.
Garnish with additional mint and vegan cheese.
