This Israeli tahini toast is easy to make in under 5 mins and contains fresh peppers, tomatoes, parsley, and lemon juice. This is a vegan tahini toast recipe as it does not contain honey, like many tahini toast recipes.
During my recent trip to Israel, I tried tahini toast for breakfast and instantly knew it would be my new healthy go-to when I got home. I chop the veggies and mix up my own tahini dressing during my weekly meal prep so I can prepare this breakfast in under 5 minutes in the morning.

VEGAN | NUT-FREE | GLUTEN-FREE OPTION
This breakfast is tasty and keeps me full until lunch. It’s easy to swap out for different types of bread if you’re gluten-free or have another type of bread in your kitchen.
By prepping the vegetables and the dressing at the beginning of the week, I can just throw some bread in the toaster and assemble it super quick. This is easy to whip up for your whole family, and a healthy way to start everyone’s day. I like to quickly build this by spreading some of the tahini sauce on toast, stacking the veggies in a pile on top, then drizzle a little more sauce over before serving.

TIPS FOR MAKING TAHINI TOAST
- For quick breakfasts, prep your veggies and tahini the night before so that it only takes a few mins to toast your slices and apply the tahini and veggies on top!
- The tahini sauce can last for 3 days once made.
- For my tahini, I use half and half whole sesame and regular shelled sesame tahini.
- When mixing your tahini sauce, it may look like it’s separating, but just whisk it well.
- Double the veggies if you’re making this recipe for two people.
- If sprinkling lemon juice on top, you can squeeze lemon over a strainer so no seeds or pulp fall on your toast.
