I’m going to show you how to make my easy apricot energy balls recipe (vegan + gluten-free)! This simple healthy snack takes under 10 mins to make using dried apricot, dates, raisins, nuts, and coconut that makes it a compact and filling energy ball.
All you have to do is add ingredients to a food processor, form them into balls, then roll in shredded coconut. If you don’t like coconut you don’t have to roll in shredded coconut.

I often forget to eat breakfast, so sometimes I’ll just take a few of these with me to my desk and snack on them while I work! It is such a simple and sweet way to have a nutritious snack. Now, I’ll show you my apricot energy balls with dried fruit and nuts.

INGREDIENTS FOR APRICOT ENERGY BALLS (VEGAN):
- Dried Apricots
- Dates
- Raisins
- Raw Almonds
- Orange or Apple Juice (if needed)
- Unsweetened Shredded Coconut
KITCHEN EQUIPMENT I USED:
- Food Processor
- ½ cup golden raisins
- ½ cup pitted dates
- ½ cup dried apricots
- ¼ cup raw almonds
- orange or apple juice if needed
- ¼ cup unsweetened shredded coconut
- Process apricots, dates, raisins, and almonds in a food processor until finely ground adding a small amount of juice if necessary to process the mixture (This mixture should be dry and sticky not overly moist).
- Form mixture into 1 inch balls with your hands and roll each ball in shredded coconut. Can omit if you don't like coconut. Place the balls in a covered container and refrigerate until ready to enjoy.
