Apricot Energy BallsI’m going to show you how to make my easy apricot energy balls recipe (vegan + gluten-free)! This simple healthy snack takes under 10 mins to make using dried apricot, dates, raisins, nuts, and coconut that makes it a compact and filling energy ball. 

All you have to do is add ingredients to a food processor, form them into balls, then roll in shredded coconut. If you don’t like coconut you don’t have to roll in shredded coconut.

My apricot energy balls recipe (vegan + gluten-free) is a simple healthy snack that takes under 10 mins to make using dried apricots, dates, coconut & more!

Ingredients
Instructions
  1. Process apricots, dates, raisins, and almonds in a food processor until finely ground adding a small amount of juice if necessary to process the mixture (This mixture should be dry and sticky not overly moist).
  2. Form mixture into 1 inch balls with your hands and roll each ball in shredded coconut. Can omit if you don't like coconut. Place the balls in a covered container and refrigerate until ready to enjoy.
