My apricot energy balls recipe (vegan + gluten-free) is a simple healthy snack that takes under 10 mins to make using dried apricots, dates, coconut & more!
Process apricots, dates, raisins, and almonds in a food processor until finely ground adding a small amount of juice if necessary to process the mixture (This mixture should be dry and sticky not overly moist).
Form mixture into 1 inch balls with your hands and roll each ball in shredded coconut. Can omit if you don't like coconut. Place the balls in a covered container and refrigerate until ready to enjoy.
