Vegan Noodle Soup
This vegan noodle soup is great to enjoy after a long, cold day to warm up and bring you back to the days when a parent or grandparent would serve you a bowl of hot noodle soup.

INGREDIENTS FOR NOODLE SOUP (VEGAN):
- Noodle of choice
- Vegan chicken substitute (I used tofu)
- Olive oil
- Onion
- Garlic
- Carrots
- Celery
- Salt & Pepper
- Dried parsley
- Dried basil
- Dried oregano
- Nutritional yeast
- Beans of choice (I used pinto)
- No-Chicken Bouillon Cubes or Vegetable Broth
- Spinach
KITCHEN EQUIPMENT I USED:
- 3 oz noodles of choice
- vegan chicken substitute, cubed (I used tofu)
- 2 tbsp olive oil
- 1 small cooking onion
- 4 garlic cloves, minced
- 2 carrots, peeled and sliced
- 2 celery stalks, chopped
- ¼ tsp salt
- ¼ tsp black pepper
- 1 tsp dried parsley
- 1 tsp dried basil
- 1 tsp dried oregano
- 2 tbsp nutritional yeast
- 1 can white orpinto beans, drained (save the liquid "aquafaba" for baking)
- 2 vegetable or no-chicken bouillon cubes
- 5 cups water
- 2 large handfuls of baby spinach
- chopped parsley to garnish
- vegan parmesan cheese, optional
- To make a vegan noodle soup, first, turn on your Instant Pot to the saute/brown setting and heat olive oil.
- Add onion, garlic, carrots and celery, season with salt and pepper and saute for 3 minutes or until onions are translucent.
- Add chopped vegan "chicken" pieces, salt, pepper, parsley, basil, oregano, and cook for another 2 mins.
- Add nutritional yeast, beans, bouillon, water, and noodles. Stir, and cover. Select the "Soup" setting and set the timer to 5 minutes. Allow the pressure to release naturally.
- Stir in spinach, and allow it to wilt. If you are using vegan parm, stir that in now.
- Taste and season to your liking and serve garnished with parsley.

No instapot. Can I use regular soup pot on stove?
