This Italian wedding soup without meatballs (we made meatless balls instead) is so hands-off that when dinner comes around, you’ll be like, “I totally forgot I had cooked this!”

Vegan Italian Wedding Soup | Crock-Pot Recipe

VEGAN | NUT-FREE | GLUTEN-FREE OPTION

I love vegan soups in the fall and winter. There is nothing more comforting than coming home from a long day in the cold to a kitchen filled with warm smells of hearty, healthy soup. One of my favourite ways to make soup is to assemble it in the morning by placing all of the ingredients into my Crock-Pot 6 Qt. Cook & Carry Programmable Slow Cooker, then I can just set it and go about my day. I can run errands and get work done, all while dinner cooks itself in the Crock-Pot Programmable Slow Cooker. This way I can still enjoy a healthy vegan meal, even when I’m short on time. And I am ALWAYS short on time.

Rather than standing over the stove all evening, I find it easier to prep all of the ingredients for this soup early in the day or even the night before, then I put my Crock-Pot Programmable Slow Cooker on the “high” setting, add all my prepped veggies, and seasonings, and program for 4 hours. 20 minutes before I plan on eating, I add the pre-cooked vegan meatballs, pasta, and spinach, set to high and set a timer on my phone for dinner time.

I serve this soup in bowls, garnished with chopped, fresh parsley, and vegan parmesan or nutritional yeast. For some added veggies, I like to serve this soup alongside my Kale Caesar Salad. Vegan Italian Wedding Soup crock pot recipe

Vegan Italian Wedding Soup Ingredients

  • water
  • onion
  • garlic
  • carrots
  • celery
  • spinach
  • Italian Seasoning
  • bay leaves
  • salt and pepper
  • no-chicken bouillon or vegetable bouillon (I used Better Than Bouillon)
  • acini di pepe pastina or other small pasta (gluten-free optional)
  • vegan sausages (I used Beyond Meat Italian)
  • vegan parmesan cheese or nutritional yeast (optional garnish)
  • fresh parsley (optional garnish)

Vegan Italian Wedding Soup Instructions

  1. In the Crock-Pot Programmable Slow Cooker, add water, bouillon cubes, onion, garlic, carrots, celery, and Italian seasoning, and bay leaves, and program to high for 4 hours.
  2. Before the 4 hours is up, preheat oven to 375F, and line a baking sheet with parchment paper or a silicone mat.
  3. Form vegan sausages into “meatballs” and bake for 10 mins on the lined baking sheet, until cooked through.
  4. Place the meatballs into the slow cooker.
  5. Add the pasta and spinach to slow cooker, and cook, covered, 20 minutes prior to serving.
  6. After 20 mins, serve soup in bowls, garnished with freshly chopped parsley and vegan parmesan or nutritional yeast.

  • 8 cups water
  • 4 no-chicken bouillon cubes (vegetable bouillon will also do)
  • 1 small cooking onion, diced
  • 3 cloves garlic, minced

  • 2 celery stalks, diced
  • 1 ½ tbsp Italian Seasoning
  • 2 bay leaves
  • salt and pepper to taste
  • 3 cups, spinach, cut into strips
  • 1 cup acini di pepe pastina or other small pasta, uncooked (gluten-free optional)
  • 4 vegan sausages, sliced or rolled into 1 inch balls (I used Beyond Meat Italian Sausages)
  • Vegan parmesan cheese or nutritional yeast, to garnish
  • Fresh parsley, to garnish

  • I have the broth and veggies cooking now. Just wondering is there a skin on these Beyond Sausage that I have to remove before rolling into balls?
