Any meal that requires little effort and minimal dishes is a win in my books. If you’re not a spicy fan, you can also try my air-fried cauliflower for your lettuce wraps!
INGREDIENTS FOR VEGAN CAULIFLOWER LETTUCE WRAPS
- 2 tbsp + 1 tbsp extra-virgin olive oil
- 3 tbsp sweet chili sauce
- 1 tbsp sriracha
- 1 lime, juiced
- 1 cauliflower, cut into florets
- Sea salt & black pepper, to taste
- 1 tsp cumin
- 1 tsp garlic powder
- 2 red bell peppers, thinly sliced
- 1 yellow pepper, thinly sliced
- 1 medium yellow onion, thinly sliced
- 1 head romaine or Boston lettuce
*Optional fixins’: sliced avocado, cilantro, grated carrots, sliced green onion, salsa, and/or dairy-free sour cream
INSTRUCTIONS FOR VEGAN CAULIFLOWER LETTUCE WRAPS
Start by preheating your oven to 425F and lining a baking sheet with parchment or a silicone baking mat. In a large mixing bowl, whisk together 2 tbsp olive oil, sweet chili sauce, Sriracha and lime juice. Add cauliflower florets to the bowl and toss to coat. Place florets on prepared baking sheet, and sprinkle with salt and pepper. Bake for 5 mins.
Meanwhile, in the same mixing bowl, toss peppers and onion in residual sauce to coat. Sprinkle veggies with cumin and garlic powder, and toss to mix. If it is a bit dry, you can add 1 additional tbsp of oil.
After the cauliflower has cooked for 5 mins, place the peppers and onions onto the sheet pan evenly with the cauliflower. Place back into the oven and roast until the cauliflower is lightly browned, and edges are slightly charred about 10-15 mins.
Place along the centre of long lettuce leaves. Serve with whatever fixin’s you are craving!
