Sheet Pan Bang Bang Cauliflower Lettuce Wraps

- 2 tbsp + 1 tbspextra-virgin olive oil
- 3 tbsp sweet chili sauce
- 1 tbsp sriracha
- 1lime, juiced
- 1 cauliflower, cut into florets
- Sea salt & black pepper, to taste
- 1 tsp cumin
- 1 tsp garlic powder
- 2 red bell peppers, thinly sliced
- 1 yellow pepper, thinly sliced
- 1 medium yellow onion, thinly sliced
- 1 head boston lettuce
- Optional fixins’: slicedavocado, cilantro, grated carrots, sliced green onion, salsa, and/or dairy-free sour cream
- Preheat oven to 425F and line a baking sheet with parchment or a silicone baking mat.
- In a large mixing bowl, whisk together 2 tbsp olive oil, sweet chili sauce, Sriracha and lime juice.
- Add cauliflower florets and toss to coat.
- Place on prepared baking sheet, and sprinkle with salt and pepper. Bake for 5 mins.
- Meanwhile, in the same mixing bowl, toss peppers and onion in residual sauce to coat.
- Sprinkle with cumin and garlic powder, and toss to mix. If it is a bit dry, you can add 1 additional tbsp of oil.
- After the cauliflower has cooked for 5 mins, place the peppers and onions onto the sheet pan evenly between the cauliflower.
- Place back into the oven and roast until the cauliflower is lightly browned, and edges are slightly charred, about 10-15 mins.
- Place along the centre of long lettuce leaves.
- Serve with whatever fixin’s you are craving!
