Recipe type: Main
Serves: 4 servings
  1. Preheat oven to 425F and line a baking sheet with parchment or a silicone baking mat.
  2. In a large mixing bowl, whisk together 2 tbsp olive oil, sweet chili sauce, Sriracha and lime juice.
  3. Add cauliflower florets and toss to coat.
  4. Place on prepared baking sheet, and sprinkle with salt and pepper. Bake for 5 mins.
  5. Meanwhile, in the same mixing bowl, toss peppers and onion in residual sauce to coat.
  6. Sprinkle with cumin and garlic powder, and toss to mix. If it is a bit dry, you can add 1 additional tbsp of oil.
  7. After the cauliflower has cooked for 5 mins, place the peppers and onions onto the sheet pan evenly between the cauliflower.
  8. Place back into the oven and roast until the cauliflower is lightly browned, and edges are slightly charred, about 10-15 mins.
  9. Place along the centre of long lettuce leaves.
  10. Serve with whatever fixin’s you are craving!
