This quick broccolini pasta recipe uses 6-ingredients including garlic, pasta of choice and broccolini (or broccoli if you prefer). This broccoli pasta is creamy, garlic-y and great to enjoy when you don't have much time for cooking. It only needs 6 ingredients plus a few optional garnishes. If you don't have access to broccolini, simply swap for broccoli or asparagus.

  1. Add salt to large pot of water. Bring a large pot of salted water to a boil. Blanch the broccolini in the boiling water for a minute or 2 mins. If you have frozen broccolini or broccoli, cook or steam based on your preference.
  2. Remove Broccolini with a slotted spoon or fine-mesh sieve. You can also use a strainer for your broccolini or broccoli. Set aside.
  3. Add pasta to boiling water, and cook until al dente.
  4. Meanwhile, heat olive oil and sliced or minced garlic in a large pan over medium heat. Cook, stirring, until fragrant and lightly browned, 5 mins.
  5. Add broccolini, chili flakes, and optional seasoning to the large pan with garlic.
  6. Next, add your pasta, by transferring it from the water with a slotted spoon or tongs, directly into the oil. Feel free to add optional parsley. Toss to coat.
  7. Add ½ cup of pasta water into the pan and bring to a boil, stirring gently.
  8. Turn off the heat, and gently stir until the "sauce" thickens.
  9. If you want a cheesy pasta, sprinkle in vegan cheese, and mix well until cheese melts.
  10. Serve on a plate and top with a squeeze of lemon.

  • I only used 1/4 cup of oil and and it turned out delicious! Highly recommend this recipe! I steamed my frozen broccoli over top my boiling pasta and added onions and mushrooms with the garlic. My non-vegan boyfriend loved this and wanted more lol

  • I only used 2 tbsp of olive oil with 1/2 cup of pasta water and was delicious

  • Made thus last night and my husband and I were shocked how amazing this dish was. It reminded us of something we had in an Italian restaurant in London. We made it with beyond meat sausage so cut the oil recommendations in half and used steamed broccoli instead. We kept going for seconds and even when I went to bed I was craving this pasta dish.
