How To Make The Best Tater Tot Casserole Recipe

This tater tot breakfast casserole is made with beyond meat sausage, chives, vegan hollandaise sauce, tofu scramble and of course, tater tots!
To begin making this tater tot casserole recipe, you first want to bake any of your fave tater tots! After you cook your tater tots, place them into a casserole dish.
Now, you’re going to want to top your tater tots with tofu scramble. You can get my “Better Than Eggs: Tofu Scramble” recipe on page 20 of my Edgy Veg Cookbook, or use my vegan scramble Florentine recipe online.
Take your cut up vegan sausage and fry them up on medium high heat and then toss them on top of your tater tot casserole. You could use any vegan protein or sausage you like, I’m using Beyond Meat sausages.
Next, top your casserole with whatever vegan cheese you like. I used cheddar style shredded vegan cheese, but you could also use gouda, mozzarella or Tex-Mex. After toping your casserole with cheese, slide it into your oven until the cheese is melted.
Once your cheese is melted, take it out of the oven and add my vegan Hollandaise sauce all across the casserole. You can get my “Ritzy Hollandaise” recipe on page 35 of my Edgy Veg Cookbook, or use my Hollandaise Sauce from my Vegan Eggs Benedict recipe online.
If you have any leftover Hollandaise sauce, you can have Eggs Benedict for the next day! For the final touches, sprinkle on some chopped chives. And voilà! The best Tater Tot Casserole Recipe for your breakfast or brunch!

Save / Print This Tater Tot Casserole Recipe
- Preheat the oven to 350°F.
- Bake or air-fry the tater tots as per package instructions then place them into a casserole dish.
- Cut up vegan sausage and fry them on medium high heat for 3-5 mins, or until browned and heated through.
- Sprinkle tofu scramble and sausage on top of your tater tots and top with vegan cheese shreds or cheese sauce,
- Slide the tots into your oven until the cheese shreds have melted, about 5-7 mins.
- Once cheese is melted, take the casserole out of the oven and drizzle with Hollandaise sauce.
- Top with fresh chopped chives & serve.
