INGREDIENTS FOR GREEN TAHINI SAUCE (VEGAN):
KITCHEN EQUIPMENT:
- ½ cup tahini
- 2 garlic cloves
- 1½ cups fresh parsley leaves and stems
- ½ cup fresh cilantro leaves & stems
- 2 green onions roughly chopped
- 2 tbsp capers, drained
- 2 tsplemon zest
- 1 tsp lemon juice
- water as needed
- salt to taste
- In a food processor blend together, the garlic and capers until finely chopped.
- Add parsley, cilantro, green onion, lemon zest, and lemon juice and blend until well chopped and combined.
- Keep the processor running, and slowly pour in the tahini. The sauce will seize- this is normal. Start adding in water 1 tablespoon at a time, until you get a smooth, velvety sauce.
- Taste and season with salt to your liking.
