I don’t live in a dorm anymore (cuz…. I’m 27) but I make this recipe on the regular when I am too busy or lazy too cook. It’s quick and easy but also delicious and healthy!! This fresh and vibrant meal may be heavy on the veggies, but it does not eat like a salad. These crispy veggies are topped with a creamy and indulgent sauce to give it rich and filling mouth feel. It is inspired by the most basic Pad Thai dish with an Edgy Veg twist, keeping it familiar but with a new life.
I love spiralized vegetables as noodles. It is such an easy way to lighten up your meals, get rid of empty carbs, or simply makes your vegetables more interesting! You can add protein to this dish by adding some sautéd tofu, tempeh or even roasted chickpeas- assuming you aren’t in a dorm. If you want more dorm friendly recipes check out this playlist! - Noodles & Veg
- Zucchini, butternut squash or sweet potato, spiralized
- Carrots, julienne
- Bean Sprouts
- Pad Thai Sauce
- ¼ Cup Soy Sauce
- ¼ Cup Maple Syrup or Coconut Sugar
- 1 Tbsp Tomato Paste
- 2 Tbsp Rice Vinegar
- 2 Tbsp Lime Juice
- 2 tsp Sesame Oil
- 1 Clove Garlic
- 1 tsp Chili Paste
- 2 Tbsp Nutritional Yeast
- Toppings: Crushed peanuts & sesame seeds
- Use a spiralizer, mandolin or potato peeler to create noodles from the zucchini, sweet potato or butternut squash.
- Place them in a bowl and set aside.
- Prepare the pad thai sauce by mixing all sauce ingredients in a blender or whisk by hand until well combined.
- You can heat this sauce up in a saucepan or microwave, or enjoy raw! I usually decide how to enjoy this sauce based on the time of year.
- Build your Pad Thai by portioning out your noodles into individual bowls.
- Add the remaining vegetables and sauce, and mix to combine.
- Make sure that all of your noodles are covered in dressing.
- Serve with a slice of lime, and topped with crushed peanuts and sesame seeds.
