Let’s face it, some times, to some people, vegetables can be boring. Like Ho-Hum, carrots next to the stuff I really want to eat, blah blah blah… WELL NOW YOU CAN MAKE THEM AWESOME-LIKE!!! And it goes a little something like this…
2 lbs carrots peeled, and cut in half crosswise then lengthwise
2 tbsp olive oil, or dairy-free butter
1/4 cup Balsamic vinegar
3 Tbsp maple syrup
1 tsp dried thyme
1 tbsp finely chopped fresh parsley
Preheat the oven to 400F and line a baking sheet or dish with parchment or a silicone baking mat.
Toss carrots with 2 tbsp olive oil directly on the prepared sheet and season with salt and pepper to taste.
Roast carrots for 30 minutes, flipping once.
Meanwhile, in small pot whisk together balsamic vinegar, maple syrup, and thyme, and simmer over medium heat until reduced slightly, about 10 mins. Remove from the heat and aside.
Toss glaze over roasted carrots and toss to coat.
Garnish with parsley & serve.
