Vegan Coconut Lime Dipping Sauce
This Coconut-Lime Dipping Sauce is a tangy complement to falafels, curry fries, tofu kabobs and even stirred into curries. This fresh and light sauce is made with coconut yogurt, coconut cream, lime, and cilantro, it is subtly sweetened with just a touch of agave.
The idea for this recipe came one evening after I made some curry fries and ran out of ketchup. I wanted something with a bold flavour, but also something that felt light. Since I had curry fries, I figured I might as well pick another flavour that goes well with indian flavours, and just happened to have coconut yogurt in the fridge that my mother-in-law accidentally bought. She wasn’t going to eat it. So I mixed some coconut yogurt with a tablespoon of coconut cream to create a thick base, and then just built on the flavours from there; some lime zest and juice, cilantro, agave, cayenne, garlic and salt. I whisked all the ingredients together and adjusted the spices and lime juice until i reached my desired flavour. Yum!
- ¼ cup plain coconut yogurt (unsweetened)
- 1 tbsp canned coconut cream
- 1 tsp lime zest
- 1 tsp fresh cilantro, finely chopped
- ½ tsp lime juice + more to taste
- ½ tsp agave
- ⅛ tsp cayenne pepper
- ¼ tsp sea salt
- ¼ tsp garlic powder
- Mix all of the ingredients together in a small bowl with a whisk. Transfer to a ramekin, and enjoy with curry fries, falafel or kebabs.
