Vegan Cookies- Chocolate Chip Cookies

These chocolate chip cookies are crispy on the outside, and chewy on the inside-- just the way everyone likes them! They may be vegan but they are just as delicious as the ones filled with butter and eggs. Best part is, you can eat the dough RAW! WARNING: You will most likely eat the whole pan at once if you do not ration them! Keep them away from loved ones or else they will eat them all on you! Seriously. they're addictive.

  • 2¼ cup flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 cup earth balance or coconut oil
  • ¾ cup brown sugar
  • ¾ cup sugar
  • 1 tsp vanilla
  • 2 eggs worth of egg Replacer (prepared according to package instructions)
  • 1½ cups vegan chocolate chips
  1. Preheat oven to 350 degrees.
  2. Sift together the flour, salt and baking soda in a large bowl and set aside.
  3. In a separate large bowl, mix together sugar, earth balance, brown sugar, vanilla and egg replacer. Add the dry ingredients to this and stir until combined well.
  4. Stir in the chocolate chips.
  5. Drop spoonfuls of dough onto a parchment paper lined cookie sheet. Bake for 8 to 10 minutes, until edges are lightly golden brown. Remove from the oven and continue baking on sheet for another 5 minutes. Remove from cookie sheet and place on wire rack to cool.
