Avocado Toast meets Mexican-inspired street corn. A fresh and vibrant avocado toast topped with a light corn salad. This avocado toast is full of flavour and perfect as a light snack or lunch.

Ingredients
  • 2 slices of your favourite bread, I like sourdough
  • 1 avocado
  • 1 tbsp cilantro, chopped
  • ⅓ cup corn kernels
  • 5 cherry Tomatoes, halved
  • 1 tsp fresh lime Juice
  • pinch of Salt
  • Vegan cheese of choice (I used vegan feta)
Instructions
  1. In a small-sized mixing bowl, combine your cilantro, corn kernels, halved cherry tomatoes, lime juice and a pinch of salt. Set aside to marinate.
  2. Toast your bread and smash some avocado on top of the toast.
  3. Top your avocado toast with a pile of the corn salad, and sprinkle with your favourite vegan cheese.
