Preheat your oven to 450F and line a baking sheet with parchment.
If you're using store bought fries:
  1. Toss frozen fries with coconut oil, salt, curry powder, and coriander, and arrange in a single layer on the prepared baking sheet.
  2. Bake them for about 20 minutes, turning them halfway through, and until all fries are golden brown.
  3. Remove from baking sheet and sprinkle with some cayenne pepper and additional curry powder to taste.
If you're using potatoes:
  1. Place matchsticks in a large bowl and add cool water to cover completely.
  2. Toss the potatoes and let sit for 5 mins.
  3. Then drain the potatoes and "wash" with cold water. This will remove some of the starch.
  4. Drain and allow to drip dry.
  5. Toss dry potatoes with coconut oil, salt, curry powder, and coriander, and arrange in a single layer on the prepared baking sheet.
  6. Bake until golden and crisp, about 35-40 minutes.
  7. Remove from baking sheet and sprinkle with some cayenne pepper and additional curry powder to taste.
Plate and enjoy with ketchup, hummus, curry or coconut lime dip.
