Avocado Toast with Tomato & Pesto Vinaigrette

I have jazzed up your basic avocado toast recipe with some basil and tomatoes, making it a perfect vegan lunch or snack!

  • 1 slice bread (try crusty artisan breads like rye, multigrain, or sourdough)
  • ⅓ to ½ ripe Avocado, peeled, seeded and sliced
  • ¼ cup halved cherry tomatoes
  • 1 cup fresh basil
  • 1 small clove garlic
  • ¼ cup olive oil
  • 1 Tbsp lemon juice
  • ½ teaspoon salt
  • Optional:
  • Fresh cracked pepper, to taste
  • Sea salt to taste, to taste
Make the Basil Vinaigrette
  1. Combine basil, garlic, olive oil, lemon juice and salt in a blender and blend for 30-60 seconds until smooth.
  2. Taste and adjust salt and pepper as needed & set aside.
Build your Toast
  1. Toast your bread on both sides.
  2. Smash on avocado with a fork, or layer in slices.
  3. Top with sliced tomatoes.
  4. Drizzle the tomatoes with a couple spoonfuls of Pesto Vinaigrette, to taste.
  5. Sprinkle with salt and cracked pepper, to taste
  6. Enjoy on it's own or serve with a side salad or soup.
