You don't need a pizza stone or even an oven to make these super simple vegan waffle pizza pockets. Make delicious homemade pizza using on a waffle iron.

  • Vegan Pizza Dough
  • Vegan cheese substitute, like shreds or homemade sauce
  • Pizza sauce or Tomato paste
  • You can use any pizza topping you like! These are a few of my favourites:
  • Your favourite vegan/faux meat
  • Caramelized onions
  • Mushrooms
  • Fresh basil, chopped
  • Fresh garlic, chopped or garlic powder
  • Dried oregano
  • Chili Flakes
Instructions
There aren't any specific measurements for the ingredients, aside from making the dough. Just add whatever your favorite ingredients are and how much you like! This is a creative recipe.
  1. Turn on the waffle iron, set it high and let it preheat.
  2. When your iron has preheated, use oil, vegan butter or spray to keep the dough from sticking.
  3. Flour your working surface and roll out tennis ball size amount of pizza dough.
  4. The thickness is up to you; I like to do a combination of thin and thick crust.
  5. Place the dough onto the waffle iron and work quickly.
  6. Start by spreading some pizza sauce onto the crust followed by all of your preferred ingredients focusing on one half, with the cheese substitute last.
  7. Quickly, fold the remaining dough onto the toppings to create what resembles a half moon to make a two-sided goodies-in-the-middle pocket.
  8. Close the lid, by pressing slightly, but don't close it completely, as this will put holes in your pocket. Just let the weight of the lid do most of the work while helping it along slightly.
  9. The cooking time will vary depending on the thickness of your dough, but you're looking for a golden-brown, crunchy exterior. This should take between 5 & 10 minutes, but you will be able to tell if it’s done, by looking at it.
  10. Carefully remove the pocket from the iron, slice along the lines & enjoy.
Notes
Chefs Tip: You can serve it with Marinara, garlic or pesto sauce for dipping.
