Veganizing Gigi Hadid Spicy "Vodka" Pasta

Bring a large pot of water to a boil, and salt with at least 1 tbsp of salt. Cook according to package directions. Reserve 1 cup of pasta water and then drain the pasta. Meanwhile, in a stir fry pan saucepan heat olive oil over medium heat. Add garlic and cook for 1 minute or until fragrant. Add tomato paste and cook for about 4 mins. The tomato paste will darken to a red-brown colour. Stir in your dairy-free cream of choice, red pepper flakes, and dried basil and simmer for 3 mins. Stir in dairy-free cheese of choice, dairy-free butter, and ½ cup pasta water. Season to taste with salt & pepper. Add cooked pasta and stir to coat each noodle evenly. Add more pasta water as needed. To serve; garnish with more dairy-free cheese, parsley, and additional chilli flakes if you desire.
