When you are in a rush for a quick and nutritious breakfast, you have to try these grab-and-go vegan cereal bites. These cereal bites are super easy to make and totally customizable to your taste palette.

  1. Line a baking sheet with parchment paper or a silicone baking mat. Set aside.
  2. In a small saucepan over medium heat, melt coconut oil. Reduce heat to medium-low, and stir in sweetener of choice, and nut butter of choice, until combined.
  3. Remove from heat, and stir in oats, cereal of choice, and shredded coconut, until well combined.
Option 1: Using an ice cream scoop, scoop out and form firm little balls or "bites" and place them on the lined baking sheet. Then, dip the top of each bite into yogurt (coating about ½) and place it back onto the baking sheet. When they've all been dipped, place them into the freezer overnight or for at least 60 mins. Store in a container in the freezer for up to 1 month. To enjoy, let them sit out at room temperature for about 10 minutes before eating.
Option 2: Transfer the mixture to an 8×8-inch baking dish and spread out evenly. Cover with a piece of parchment or plastic wrap and press firmly. This step ensures they do not crumble, so really press. You can use a glass to do this if you need some help. When they are cooled, top with yogurt and place them into the freezer overnight or for at least 60 mins. Cut into bars (I was able to make 12), and store in a container in the freezer for up to 1 month. To enjoy, let them sit out at room temperature for about 10 minutes before eating.
