These vegan chocolate chip cookie bars are a perfect dessert if you can't decide between cookies and brownies!

  1. Preheat oven to 350F.
  2. In a medium-sized mixing bowl, whisk together butter and sugar.
  3. Mix egg replacer then add.
  4. Add vanilla and mix.
  5. Mix flour, baking soda, baking powder and salt.
  6. Add to wet ingredients and mix to combine. Be careful not to over-mix.
  7. Fold in chocolate chips.
  8. Line baking dish or loaf pan with parchment paper.
  9. Spread batter evenly into a small baking dish or loaf pan.
  10. Bake for 20-25 minutes until the edges begin to brown and a toothpick is inserted into the center and comes out clean.
  11. Allow to cool completely before cutting into 8-10 squares.
