  1. Preheat oven to 450F.
  2. Bring a large pot of water to a boil. Cook macaroni for 5 minutes. Reserve 1 cup of the pasta water and drain pasta.
  3. Meanwhile, in a saucepan over medium heat, melt vegan butter.
  4. Add flour and whisk constantly for 1-2 minutes (or until the mixture turns light brown). Remove from heat and gradually pour in the soy milk, whisking constantly.
  5. Return the pan to the heat, and whisk for 3-5 minutes or until thickened.
  6. Add the onion soup mix and 1 cup cheddar and ½ cup mozzarella cheese and stir to combine and until the cheese is melted.
  7. Pour the sauce over the top of the cooked elbow macaroni. Stir to combine. Add some pasta water as needed to create a thick and velvety sauce that clings to the pasta.
  8. Pour the pasta mixture into a casserole dish and spread out in an even layer.
  9. Spread roasted garlic on one side of each baguette and place them on top of the macaroni, garlic-side up.
  10. Sprinkle the pasta and baguette evenly with ½ cup cheddar and ½ cup mozzarella.
  11. Bake the mac & cheese for 12-15 minutes or until cheese is melted and bubbling.
  12. Remove from the oven and garnish with parsley.
  13. Allow the dish to sit for 5-10 minutes, then serve.
