Vegan Kewpie Mayo (Japanese Mayonnaise)

- In a small saucepan, bring the vinegar to a simmer over high heat. Lower the heat to medium to keep it simmering, not boiling.
- Simmer for 3-5 minutes or until reduced to about 1 tbsp.
- Place vinegar into a bowl with msg, turmeric and sugar and combine.
- Add vegan mayo and whisk until smooth.
- Refrigerate until chilled.
