cane or granulated white sugar
¼ cup
apple sauce
¼ cup
vegan margarine/butter
½ tsp
apple cider vinegar
1½ tsp
vanilla
1 tsp
baking soda
1½ cups
flour
1 tsp
sea salt
3 very ripe
bananas
, mashed
1 cup crushed
Biscoff cookies
(optional)
1 cup
dark chocolate chips
Optional Biscoff topping:
3 tbsp
vegan margarine/butter
, melted
½ cup crushed
Biscoff cookies
2 tbsp
all-purpose flour
¼ cup
sugar
¼ tsp
ground cinnamon
Instructions
Preheat oven to 325F. Line a standard bread pan with parchment paper. Set aside.
In a large bowl cream/whisk together sugar, apple sauce, vegan melted butter, apple cider vinegar, and vanilla.
Sift in baking soda, flour and salt.
Add mashed bananas and mix well. First, Fold in 1 cup of crushed cookies and chocolate chips.
Transfer the batter to your lined bread pan.
In a small bowl, combine melted butter with ½ cup of crushed cookies, flour, sugar (I recommend coconut or brown sugar), and cinnamon.
Sprinkle the topping evenly over the batter in the pan, and place into the preheated oven.
Bake for 60 mins or until a toothpick comes out clean.
Place onto a wire cooling rack, and allow to cool.
Remove from the pan and serve.
