Vegan Cranberry Mimosa made with water, cranberries, rosemary, sugar and champagne or prosecco. Allow extra time for your ingredients to steep for strong flavour!

  1. In a medium saucepan combine sugar, water, cranberries, and rosemary.
  2. Bring to a boil, stirring constantly, until the sugar has dissolved.
  3. Remove from the heat, cover and refrigerate for at a few hours. The longer you allow the ingredients to steep, the stronger the simple syrup will taste.
  4. Strain simple syrup and keep in the fridge until ready to use.
Assemble your Cocktail:
  1. For each cocktail, add 1½ oz of cranberry simple syrup to each champagne flute or coupe.
  2. Place 2 whole cranberries into the glasses as well.
  3. Fill each flute with the sparkling wine of your choice and garnish with a sprig of rosemary.
