Today I'll show you how to make this saucy, sweet and sour tofu recipe. Served with rice, noodles, or veggies, this flavourful high protein recipe is yummy for a weeknight dinner, food prep, or to show your non-vegan friends how yummy tofu can be.

How to Press Tofu
  1. Remove the tofu from the package and wrap with a clean dish towel.
  2. Place the tofu on a cutting board, and cover with a baking sheet, and something heavy, like a cast iron pan or two. Press for a minimum of 15 mins or up to overnight.

  1. Heat a skillet over medium-high heat and add a touch of oil.
  2. Add cubed tofu and cook stirring occasionally, until all sides are golden brown. Remove tofu from skillet and set aside.
  3. Add vegetables to the skillet with a touch of oil or water and cook until tender. Set aside.
  4. Meanwhile, add pineapple juice, coconut sugar, rice vinegar, ketchup, tamari or soy sauce to a saucepan and bring to a boil. Stir constantly.
  5. Stir in the cornstarch slurry and bring to a boil.
  6. Reduce to a simmer, and stir until thickened.
  7. Mix the tofu, veggies and sauce together in the skillet, until well coated. Start with half the sauce and add more as needed, saving some for others to add additional sauce to their preference.
  8. Serve atop rice or noodles of choice and garnish with sesame seeds.
