This vegan bacon cheeseburger meatloaf is inspired by Paula Deen’s popular non-vegan bacon cheeseburger meatloaf recipe. This vegan version of meatloaf has a nice smokey bacon-y flavour and perfect for a family-friendly dinner or potluck.

  1. Preheat oven to 350F.
  2. In a large bowl, combine the ground round, bacon, cheese shreds, egg replacer, breadcrumbs, and vegan mayo until well mixed.
  3. In a small bowl, combine the ketchup and mustard.
  4. Stir ¼ cup of the ketchup mixture into the “meat” mixture, reserving the rest for a glaze.
  5. Press “meat” mixture into a loaf pan and spread the remaining ketchup mixture over the loaf. Bake for 40 minutes or until firm.
  6. Top with French fried onions and bake another 10 to 15 minutes or until onions lightly golden and loaf is firm.
