A super easy, instant pot jackfruit pulled pork recipe. You can turn this pulled jackfruit into vegan pulled "pork" tacos (also known as Carnitas), jackfruit pulled "pork" sandwiches, and more. This instant pot recipe will show you how to make the best vegan pulled pork you'll ever have!

  1. Drain and rinse the jackfruit and place into the instant pot. Using a potato masher, mash the jackfruit to help it shred about halfway.
  2. Add remaining ingredients and stir to combine. Close the lid and the pressure valve, and pressure cook the jackfruit for 5 minutes.
  3. Allow the pressure to release naturally for 10 minutes.
  4. Open the vent, and then the lid and stir.
  5. Use the potato masher again to shred the jackfruit until it resembles pulled pork.
  6. Serve the jackfruit as is, or following the variations below, or store in the fridge until ready to serve.
To make BBQ Pulled jackfruit sandwiches: Add ½- ¾ cup vegan-friendly bbq sauce and serve on a toasted bun topped with slaw.
To make smokey tacos: Preheat the oven to 400°F and line a baking sheet with parchment or a baking mat. Spread the pulled jackfruit out onto the baking sheet and bake in the oven for 10 minutes. Top with cabbage slaw or mango salsa.
