Orange Sesame Noodles | Vegan Noodles

- 1 tbsp vegetable oil
- 1 cup broccoli, cut into small florets
- ½ cup shredded cabbage
- ½ cup shredded carrots
- ½ cup snap peas, halved
- ¼ cup Florida orange juice
- 3 Tbsp almond butter
- 3 Tbsp tamari
- 2 Tbsp toasted sesame oil
- ½ in knob of freshly grated ginger
- 1 Tbsp grated orange zest
- ¼ teaspoon cayenne pepper
- Cooked soba noodles for 4
- Heat oil in a large skillet or wok over medium-high heat.
- Add veggies, and cook and stir until the vegetables are slightly softened - about 7 to 10 minutes.
- Meanwhile, combine orange juice, almond butter, tamari, sesame seed oil, ginger, orange zest and pepper in a blender and blend until smooth.
- Add sauce to veggies and stir to combine.
- Add noodles and toss to coat completely.
- Serve.
