Orange Sesame Noodles | Vegan Noodles

Ingredients
  • 1 tbsp vegetable oil
  • 1 cup broccoli, cut into small florets
  • ½ cup shredded cabbage
  • ½ cup shredded carrots
  • ½ cup snap peas, halved
  • ¼ cup Florida orange juice
  • 3 Tbsp almond butter
  • 3 Tbsp tamari
  • 2 Tbsp toasted sesame oil
  • ½ in knob of freshly grated ginger
  • 1 Tbsp grated orange zest
  • ¼ teaspoon cayenne pepper
  • Cooked soba noodles for 4
Instructions
  1. Heat oil in a large skillet or wok over medium-high heat.
  2. Add veggies, and cook and stir until the vegetables are slightly softened - about 7 to 10 minutes.
  3. Meanwhile, combine orange juice, almond butter, tamari, sesame seed oil, ginger, orange zest and pepper in a blender and blend until smooth.
  4. Add sauce to veggies and stir to combine.
  5. Add noodles and toss to coat completely.
  6. Serve.
