This Vegan Ramen Mac n Cheese ramen recipe is insane. It whips up in just a few minutes and is almost as good as your momma used to make it.

  1. In a medium to large size bowl place the ramen noodles, and add boiling water until the noodles are covered. Cover with a lid and allow noodles to soften for 2-3 minutes.
  2. Set aside the included flavor packet.
  3. While you are waiting for the noodles to soften, prepare the cheese sauce.
  4. Combine the non-dairy milk and cornstarch into a small bowl or mug and whisk with a fork.
  5. Add the non-dairy cheese shreds and cook for 30 seconds at a time until the cheese has melted, mixing well after every 30 seconds. This should take a combined time of 1- 1.5 minutes.
  6. Once the noodles are soft, drain and combine with cheese sauce and mix until all noodles are coated.
