Thai Soba Noodles Recipe With Peanut Sauce GLUTEN FREE

This 15 minute thai noodle bowl is so easy to whip up! Packed full of sweet Thai flavor and delicious nutrient dense ingredients!!

Ingredients
  • Vegan Thai Peanut Sauce (recipe below)
  • soba noodles (gluten free)
  • 4 cups cabbage, bok choy, kale, collards, chopped (any green really)
  • 2 Tomatos, chopped
  • 2 cups bean sprouts
  • handful fresh cilantro, finely chopped
  • 1 onion, chopped
  • sesame seeds, for garnish
  • 1 Tbsp coconut oil
  • salt & pepper to taste
Instructions
  1. Chop up your veggies.
  2. Heat a large pan with water for your noodles.
  3. In a wok or large pan, heat up coconut oil.
  4. Add onions and cook until translucent, this should take 3 mins or so.
  5. Add tomatoes and greens of your choice and cook until wilted, about 5-8 mins.
  6. While your veggies are cooking, make your sauce (if you haven't already) and set aside.
  7. When your veggies are about 3 mins away from being ready, toss your noodles into your boiling hot water and cook for 3 minutes.
  8. Drain the noodles and return to the same large pot.
  9. Plate your bowl by placing your noodles in the center and arranging your cooked veggies and bean sprouts around it.
  10. Top with your sauce and garnish with chopped cilantro and sesame seeds.
  11. Enjoy.
Notes
Add Sriracha if you like spicier noodles!
