A copycat recipe for the Taco Bell chili cheese burrito. This burrito combines chili flavored vegetarian ground beef, refried beans and vegan cheddar cheese in a tortilla. This Taco Bell recipe is super easy and so delicious.

  1. Over medium-high heat, heat oil in a medium pan. Add onion and sauté until translucent. This should take about 3-5 mins.
  2. In a bowl or measuring cup, dissolve the corn starch in the water with a fork.
  3. Add the cornstarch slurry and tomato paste to the pot with onions and stir, until combined.
  4. Add cayenne pepper; chili powder, salt, vinegar, and jalapeños, stir.
  5. Bring to a boil, reduce heat, and mix in the veggie ground beef and refried beans.
  6. Stir in half of the cheese until melted, and let simmer for 30 minutes, or until thickened.
  7. Spoon some chili into each tortilla, top with remaining cheese and wrap up the tortilla.
  8. I like to toast both sides to help them stay together.
  9. Enjoy! She's a messy one!
