People always ask me what my favourite food is. That is an easy answer… I am totally OBSESSED with pizza! It is the best food on the planet. Any time someone asks me what food I would bring to a desert island; I always say pizza. However, did you know that some folks feel like they can’t eat pizza? THAT my friends, is total B.S. ! Vegans and even gluten free peeps can enjoy the magic that is pizza. These Zucchini boats are the way to do that! take away the gluten filled crust and add some Daiya and VOILA! gluten-free and vegan pizza!
Daiya, cheddar or mozzarella flavour
½ cup grape or cherry tomatoes, halved
2 cloves of garlic, minced
1 tbsp olive oil
¼ cup bread crumbs
2 tbsp nutritional yeast
Nutritional yeast, to sprinkle
Salt and pepper, to taste
Cut the zucchini in half lengthwise and trim a bit off the bottom with a vegetable peeler so it sits still in a baking dish. Scoop out the center to make a small canoe with a knife or spoon.
Brush the surface with a mixture of garlic, nutritional yeast, olive oil, salt and pepper. Arrange halved grape tomatoes into the grooves, sprinkle with bread crumbs and at 350 degrees for about 30 minutes.
Remove and place mozzarella Daiya in between the tomatoes, place them back, under the broiler until golden and bubbling.
Remove and drizzle with olive oil and sprinkle with nutritional yeast.
