Granola often sucks. Bottom line. But let’s face it, as a vegan breakfast options are slim and few. Granola is a few things, and interesting it is not. But this easy to make power granola makes an amazing breakfast cereal, that even I would eat. Sweet, hearty, crunchy and filling. So when you think granola don’t think barefoot hippie in the back woods, think sophisticated breakfast with a side of fruit and a mimosa.
2.5 cups rolled oats
½ cup sunflower seeds
½ cups hemp seeds
¼ cup pumpkin seeds
¼ cups apple sauce
1 teaspoon ground cinnamon
½ teaspoon ground ginger
½ tsp cinnamon
¼ tsp nutmeg
¼ cup agave syrup or honey
8 dates
½ cup almonds
½ teaspoon rock salt
1 tablespoon coconut oil
½ cup unsweetend dried cranberries
1/2 cup mulberries

Preheat oven to 325F.
In a large bowl with together all of your ingredients except cranberries and mulberries.
Spread the mixture out on a large parchment paper lined baking sheet. Please in the oven for 3-40 minutes, watching carefully. Use a spatula to stir the mix around to ensure even baking. Bake until granola is evenly golden.
Let cool, stir in reserved fruit, and store in an airtight container or jar for up to 6 months.

Every time I read ‘healthy’ in the title of a clip, I find out that coconut is an ingredient. It contains very saturated fats, though. That’s why it gets solid so quickly.
