It’s the stuff that your parents would tell you would make your teeth fall out. So super sweet you could actually feel the cavities forming as you chewed it. These days I am a bit wiser in my dessert decision making, but let’s face it, I still love to eat cakes, and ice creams, chocolate and of course fudge. This almond fudge recipe does not call for too many ingredients or complicated steps, it is easy to make and even easier to finish to entire bowl.
Whether you are PMSing, feeding a breakup or celebrating the new shoes you found on sale, this recipe will satisfy your sweet tooth without the post-indulgent guilt. Try it with a glass of wine or a snifter of scotch, we all need to fake a little class once in a while don’t we? Eat up!
1 cup unsalted almond butter
¼ cup coconut oil
2 tbsp agave or raw honey
½ tsp vanilla extract
½ tsp Himalayan rock salt[youtube=http://youtu.be/2fUs-0Ha6Uk]
Mix all ingredients in a food processor, pulsing first and then mixing until well combined. Transfer the mixture to a small, shallow baking dish, lined with parchment paper or plastic wrap. Smooth out the dough, and place in the freezer for 1 hour or until stiff.
Remove the fudge from the baking dish and peel off the paper or wrap. Cut into squares and serve. You can store these in an airtight container for up to one month.
