vegan pina colada recipe

 

A Pina Colada is a favorite summer cocktail among many.  It was hot yesterday and I was craving something coconutty but light. I thought to myself, well jeez, how about a virgin raw cocktail?! A few idea came to mind, like coconut mojitos and margaritas; but what I decided on was a Pina Colada. Sweet tangy pinapple juice, and coconut milk really are the perfect combination. It’s so simple to make at home! Have it virgin, or with a splash of rum.  The key to this is juicing pineapple yourself; but if you do not own a juicer, or are short on time just get yourself some organic pineapple juice instead. I wont judge you ( I promise).

2 cups pineapple juice

3/4 cups coconut milk

handful of ice (optional)

1-2 oz rum, Malibu or regular ( if desired)

 

At least 30 minutes before you begin assembling, or while you are juicing your pineapple, place your can of coconut milk in the fridge to harden. Then juice your pineapple, or go do something else… like eat some chocolate. After 30 minutes add your pineapple juice to your high-speed blender with the hardened coconut milk and a handful of ice cubes if desired.  ( also add rum now if you wish). The ice cubes will make the Pina Colada a slushy consistency, if that’s what you’re into…

Blend the ingredients until well combined and pour into a cocktail glass and garnish with a wedge of pineapple.

Sip and enjoy the sunshine.
