Vegan Cobb Salad Recipe (VIDEO)

Cobb salad has always been the  go-to unhealthy salad. But it doesn’t have to be; with a few small changes, this fat-filled guilt-trap can be a delicious and healthy option. The fats in this vegan cobb salad recipe are all incredibly healthy and will love your body instead of making you feel  like poop. With high protein beans and hearts of palm made to taste like eggs, you wont even miss the bacon version.

The perfect light but filling summer salad for BBQs and picnics!

 

Vegan cobb salad

 

Chopped fresh kale, massaged with french dressing

1/3 cup sliced black olives

1/2  sweet onion, chopped

1 avocado, cubed

1 cup cherry tomatoes, halved

1 cup kidney beans, cooked and chilled

1 cup hearts of palm, cubed and  tossed in turmeric dressing

French dressing

Turmeric Dressing:

pinch of turmeric

1/2 tbsp olive oil

1 tbsp apple cider vinegar

2 tbsp nutritional yeast

 

Massage your kale in salad dressing and place in a large bowl.

In a smaller bowl toss half of your hearts of palm in the turmeric dressing. Then lightly mix in the regular hearts of palm. Try not to mix too much so that they resemble egg. Yum!

To build your salad simply add all your ingredients in thin rows across the top of your kale, to look like cobb salad!

Serve! I like this salad with a generous drizzle of my Vegan French Dressing.
