You are 8 years old, opening up your lunch box at snack time. You stare over the top of the pink zipper bag and watch as each kid pulls out their granola bars, and apples, fruit roll ups and Snack Packs. Every day was different, some times you got boring, browning apple slices and sometimes you hit the jackpot with a Snack Pack chocolate pudding… What will it be today?
As an adult I think we still go through this. “Maybe I will treat myself today and eat a bad, empty calorie treat instead of that apple or grapefruit…”
What if I told you that you could eat a rich and creamy chocolate treat, but not feel guilty about it? Well at this point you know all too well that I almost LIVE off of healthy treats, every day feels like I am indulging. So today we will indulge in a childhood favourite… Jell-O Pudding, but vegan and super good for you! This chocolate pudding stars my favourite green, good for you fat– the avocado! Yes, you can make that sexy looking guy into a delicious decadent and rich vegan avocado pudding that will give even Jell-O a run for their money. What’s even better is that this is a 100% Raw Pudding as well!
Move over dairy-rich, sugar laden snacks… We’re making Chocolate pudding, avocado style!

1 1/5 avocados
1/3 cup cocoa
1/4 cup coconut mylk
1/3 cup maple syrup
1 1/2 tsp vanilla extract
pinch of salt
Combine all of your ingredients in a high speed blender and mix the heck out of it!! add more or less coconut mylk until you get your desired texture and taste. Garnish with fruit of your choosing and enjoy.
