New Years Eve Cranberry Champagne (With Video!!!)

New Years is one of my favourite holidays because everyone wants to make out! But seriously, is there anything more wonderful then the reflection of your past year and the writing of new goals, the adventure of entering the new year in a wonderful relationship or the drunken stuper that will determine whether the year ahead will be a great one? Well, probably; but who gives a crap! My NYE gift to you is a tart but sweet champagne cocktail that will tingle your taste buds (in a good way) and bubble your disposition.

1 cup cane sugar

1 cup water

1 cup halved fresh cranberries

4- 6 sprigs of fresh rosemary, plus extra for garnish

1 ½  tsp pure vanilla extract

4 bottles Sparkling Cava or Champagne

In a small saucepan combine sugar and water and warm over medium heat. Stir until sugar dissolves. When it has, remove from heat.  Add cranberries, vanilla extract and 3 sprigs of rosemary. Cover and refrigerate for at least 12 hours. Check on this after 6 hours and add more rosemary to taste.

To mix your festive cocktail, add 1 tbsp of your cranberry simple syrup to each champagne flute. Be sure to add a couple cranberries as well. Then top with Cava or champagne and garnish with a sprig of rosemary if you so desire.
