(Makes about 10- 15 cookies)
Sometimes you are just too gosh darn, lazy too bake your cookies. Or for those of you that forget about your cookies, despite you iPhone timer app, this cookies recipe is quick, easy and to die for delicious! It is even good for you! High in protein and good for you fats, this treat is one that you can feel good about!
¾ cup gluten free oats
¼ organic pumpkin seeds
¼ cup shredded unsweetened coconut
4 tbsp raw cacao powder
3 tbsp organic coconut oil
2/3 cup maple syrup or agave
½ cup pure almond or peanut butter ( or any nut butter you prefer)
1 tsp cinnamon
Himalayan rock salt crystals (if desired)
- In a saucepan over medium heat, combine maple syrup or agave with oil, and mix with a whisk. Once combined, add cacao and cinnamon.
- Allow to simmer for a few minutes, and stir constantly. Do NOT boil!
- Turn the heat down to low and add the oats, pumpkin seeds, shredded coconut, nut butter, and vanilla. Mix and remove from heat.
- Drop large spoonfuls onto a cookie sheet and top with a sprinkle of salt if you desire. Allow to cool in the fridge or freezer.
