Avocado Toast with Tomato & Pesto Vinaigrette

- 1 slice bread (try crusty artisan breads like rye, multigrain, or sourdough)
- ⅓ to ½ ripe Avocado, peeled, seeded and sliced
- ¼ cup halved cherry tomatoes
- 1 cup fresh basil
- 1 small clove garlic
- ¼ cup olive oil
- 1 Tbsp lemon juice
- ½ teaspoon salt
- Optional:
- Fresh cracked pepper, to taste
- Sea salt to taste, to taste
- Combine basil, garlic, olive oil, lemon juice and salt in a blender and blend for 30-60 seconds until smooth.
- Taste and adjust salt and pepper as needed & set aside.
- Toast your bread on both sides.
- Smash on avocado with a fork, or layer in slices.
- Top with sliced tomatoes.
- Drizzle the tomatoes with a couple spoonfuls of Pesto Vinaigrette, to taste.
- Sprinkle with salt and cracked pepper, to taste
- Enjoy on it's own or serve with a side salad or soup.
