PF Chang's style Lettuce Wraps with tofu. This copycat recipe you can easily make in just 20 minutes. And it tastes amazing! They make an awesome dinner or a great lunch for school!

Ingredients
  • Boston or romaine lettuce washed & dried & cut into wrap appropriate sizes
Mushroom filling
  • 8 ounces mushrooms of your choosing ( I like cremini), finely chopped
  • 1 package firm tofu (do not use silken)
  • 3 Tbsp soy sauce
  • 2 tablespoons rice vinegar
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • 2 teaspoons freshly grated ginger
  • ¼ teaspoon red pepper flakes (omit for kids or if sensitive to spice)
  • 1 Tbsp coconut oil for cooking
Options for serving:
  • 1-2 Green onions, thinly sliced
  • 1 Carrot, ribboned using a vegetable peeler, or grated
  • Trail mix or granola for dessert/snack
Instructions
  1. Press the tofu to squeeze out as much liquid as possible.
  2. Heat coconut oil in a large nonstick skillet over medium-high heat.
  3. Once the oil is hot, add in onions, and garlic and cook until fragrant (about 3 minutes).
  4. Add in mushrooms and cook for about 10 minutes until they begin to wilt and brown slightly.
  5. Crumble in the tofu, breaking it into very small pieces as it cooks. Cook for about 5 minutes.
  6. Add in the soy sauce, vinegar, ginger, and read pepper flakes if using and continue cooking until any remaining tofu liquid cooks off and the tofu starts to turn golden brown.
  7. Pour the sesame oil over the top of mixture and stir to coat. Cook for another 1-2 minutes.
  8. Using a bento-style bunch box or individual containers (or even cupcake liners) separate all food items and place into lunch box.
  9. Now your kid, or you (a big kid) can stack and play with their lunch while they eat it!
To Serve/eat: Spoon the tofu mixture into individual lettuce leaves. Top with green onions, carrots, and enjoy.
