Buffalo Chicken Caesar Wrap – Vegan Recipe

Vegan Wrap BUFFALO Chicken Caesar

Who doesn’t like a good Chicken Caesar Wrap, especially a Buffalo Chicken Caesar Wrap? This week I have decided to take this classic wrap to a whole other dimension by making it a vegan wrap. This vegan recipe is not only a delicious alternative to the traditional Buffalo Chicken Caesar Wrap it’s also a great way to embrace the 30 day vegan challenge this month. This is one of James’s favourite easy to-go meals, so making a vegan version was a must this month! I think he might even like this version better than the real chicken version!

The first step in creating this Vegan Buffalo Chicken Caesar Wrap will be selecting your chicken alternative. Thanks to the growing vegan community (yay!), there are many awesome alternatives out there. I like to use my vegan McNuggets or Popeyes Fried Chicken recipe for this one; or you could use one of the many breaded vegan chicken patties from your favorite health food store.

To start, make my Vegan Caesar Dressing recipe and a large bowl and add a your greens of choice. Romaine is the traditional go to lettuce for a Caesar Salad but you can use any lettuce you prefer. When I want an excuse to call this healthy, I will even add spinach or kale! Add a smidge of Parmesan cheese, or more than a smidge if you’re as excited about vegan cheese as I am.

In another bowl add your chopped up vegan chicken nuggets. In all reality it doesn’t really matter how you cut your vegan chicken up, some people prefer cubes, some people prefer strips, theoretically you could cut them into the shape of little chicken dinosaurs. The point is that it doesn’t matter how you decide to cut them up just be sure they are an appropriate size for the wrap. After putting your vegan chicken into the bowl add your desired amount of buffalo sauce and mix up the vegan chicken being sure to get a nice even coating of the buffalo sauce on your vegan chicken pieces. This is a crucial part in the creation of your Vegan Buffalo Chicken Caesar Wrap and the sauce you use, along with it’s level of spice, is going to vary from person to person. If you don’t like or have buffalo sauce you could really use any hot sauce of your choice!!!

You are now ready to wrap up everything in your wrap!!! Even after years of wrapping up various items, it always takes me about 2 tries to get it right. Hey, at least I’m not like James and over-stuff EVERYTIME! Hehehe

Instructions
  1. Heat nuggets or chicken substitute in oven or according to package directions.
  2. Toss greens with caesar dressing; stir in vegan parmesan. Set aside.
  3. Once chicken nuggets (or chicken substitute) are heated, cut them up into small pieces and toss with buffalo sauce.
  4. Lay your tortilla on a flat surface and line the center with dressing coated greens, leaving small border at each end; top with roughly ¼ cup coasted chicken nuggets.
  5. Fold up the tortilla over filling, then fold in sides and roll up tightly.
  6. Slice in half diagonally and serve.

    I just made this recipe and it was not only the easiest recipe ever, it was SO tasty! I used her chicken nuggets, and they were the best vegan chicken sub I have eaten yet! Yummy!
